Vegan Energy Balls ♡ Easy & Healthy Snack

 

 

 

 

 

Delicious Energy Bliss Balls for that extra Super-boost

You may know them as energy balls, energy bites, bliss balls, date balls, etc. They are like the easiest snacks to make at home and my version only needs 5 ingredients (or less!) and contains some superfoods to give you that extra nutrition boost! In my recipe there are two outer coating options – crunchy roasted peanuts or coconut flakes! You can make either or both! Yay! I love to add the coating to give them some extra flavour or crunch and also so that the balls don’t stick to your fingers when you eat them. These energy balls can also easily be made raw if that’s what you prefer and are perfect to take to school or work as a healthy snack!

 

 

Yields: 12

Ingredients
15 pitted dates
1/4 cup walnuts
2 tablespoons goji berries (optional but recommended or other dried berries)
1 tbsp buckwheat groats (optional but recommended for crunch)
Coating options
Roasted peanuts chopped (or raw)
Coconut flakes

 

Instructions
Blend dates in a blender or food processor until it starts to form a paste.
Add in the walnuts, goji berries and buckwheat groats and continue blending until the mixture sticks together and holds itself together.
Form small balls with your hands and coat them with the peanuts or coconut flakes.
Refrigerate to firm up the balls a little and enjoy!

 

These energy balls can also easily be made raw if that’s what you prefer and are perfect to take to school or work as a healthy snack!
