This vegan avocado smoothie is one of my ALL TIME favourite smoothies! It doesn’t even taste like avocado. In fact, it tastes like cookies to me. Yes, COOKIES! It’s so creamy and rich, yet good for you as it’s loaded with healthy fats thanks to the avocado and is also free of refined sugar. It’s easy to make as you only need a few ingredients and my recipe makes the perfect amount for 1 small cup. Plus you get a nice little workout from squeezing the grapefruit. 😉 It’s important that the avocado you’re using is ripe, as that’s key to getting the beautiful creamy consistency. You can check the ripeness by squeezing the avocado. If it’s a little soft and squishy, then you know it’s ripe!

1/2 grapefruit juiced
1 ripe avocado
2 tbsp agave
1 tsp vanilla essence (adjust depending on how strong yours is)
2 tbsp water
1/2 cup ice cubes
- Blend all the ingredients in a blender until smooth. Serve chilled and enjoy!
