Another fabulous pancake recipe for you!
These vegan buckwheat banana pancakes are just as good.
Not only are they fluffy and thick, they taste amazing with a lovely sweet banana flavour and are not overpowered by the taste of buckwheat as some buckwheat pancakes tend to be, because the cornmeal and bananas mask that. They are super healthy thanks to superfood ingredients such as buckwheat (which also makes them gluten-free) and chia seeds. They also have a bit of maca in them for a little energy boost in the morning when we need it the most!
These banana pancakes are very versatile as you can leave out the chia and maca. I use soy milk in this recipe but you can also use any other kind of vegan milk you like and they would still taste great! I also use coconut oil to cook them with but if you don’t have it or don’t have access to it, don’t worry! You can substitute that for some good quality margarine, and if you don’t have margarine then also some cooking spray or vegetable oil would work just fine too!
Since these pancakes are sweet thanks to the bananas, no extra sweetener of any kind is needed. Just make sure to use bananas that are ripe! 😉 You can also use any toppings you like on them!

- 1/2 cup buckwheat
- 1/4 cup cornmeal
- 1 1/2 tsp baking powder
- 1 tbsp maca powder
- 2 tbsp chia seeds
- Pinch of salt
- Pinch of cinnamon
- 2 ripe small bananas
- 3/4 soy milk (or other vegan milk)
- 1 tsp vanilla essence
- 1 tbsp melted coconut oil
- Coconut oil for cooking
- Mix all of the dry ingredients in a big bowl until combined.
- In a smaller bowl, mash the bananas until there are no chunks left.
- Transfer the mashed bananas to the dry ingredients and add in the soy milk, vanilla essence and mix together.
- Once combined, mix in the melted coconut oil.
- Add some coconut oil to a hot non-stick pan and cook the pancakes on low-medium to medium heat. Make sure that there is always a coating of coconut oil in the pan. When the pancakes have turned golden brown on the bottom, flip them over.
