Chilled Ginger Lime Watermelon Soup

Ingredients
Flesh of one small seedless watermelon (about 5 cups)
4 pitted medjool dates
2 teaspoons fresh ginger, minced
1/4 cup fresh lime juice
10 large mint leaves
3/4 teaspoon sea salt
10 ice cubes

Instructions
In a Vitamix or other high-speed blender, combine watermelon, dates, chia seeds, ginger, lime juice, mint leaves, sea salt and ice.
Blend on high for 20 seconds. Divide between bowls and enjoy!
