This is a Christmas chronicle of a Flower Power cake. We use dripping cashews that when blended turn super tawny and smooth. The membrane is honeyed and crunchy with nuts and dates, and a pomegranate commanding adds a fresh, fruity note to a Christmas spiced filling. Serve a cake cold though not deep-frozen.
Ingredients
Crust
1 1/2 cups raw almonds, walnuts, or hazelnuts
1/2 crater raw, shelled sunflower seeds
2 Tbsp. hemp seeds
12 uninformed Medjool dates, pitted
2 Tbsp. pure coconut oil
1 tsp. sea salt
Filling
1/3 crater pure coconut oil
1/3 crater agave syrup (nectar)
2 cups tender cashews, dripping for during slightest 2 hours and adult to 8 hours
Zest and extract of 1 vast lemon
Zest and extract of 1 orange
2 tsp. belligerent cinnamon
1 tsp. belligerent cloves
1 tsp. belligerent cardamom
1/2 vanilla bean, separate lengthwise
Topping
Seeds from 2 middle pomegranates (you could surrogate it with solidified raspberries to make it reduction expensive)
Juice of 1/2 lime
Special equipment: An 8”-diameter nonstick springform pan
Crust Grind a initial 3 reduction in a blender or food processor for 1 minute. Add dates, oil, and salt and purée until reduction comes together. Place in springform vessel and press uniformly opposite bottom of pan. Chill.
Filling Heat oil and agave in a tiny saucepan over low heat, whisking, until liquid. Place reduction in a blender or food processor; supplement dripping cashews, lemon extract and zest, orange extract and zest, cinnamon, cloves, and cardamom. Scrape in seeds from vanilla bean; drop bean. Purée until really smooth, about 2-3 minutes. Pour stuffing over membrane and chill in freezer until set, about 30 minutes.
Topping Place pomegranate seeds and orange extract in blender or food processor and mix until smooth. Pour commanding over cashew filling. Chill in freezer until solid, 30–60 minutes. Let mount during room heat 10–15 mins before serving. Run a pointy blade under water to make it easier to cut a slices.
DO AHEAD: Can be done 2 days ahead. Remove from freezer and let mount about 20 mins before serving.
