A healthy, raw dessert treat, these little gems are quick and simple to make. The perfect duo of mint and chocolate are complimented by the crunch of almond and hint of sea salt. Indulge in this fresh burst of summer flavor!
Makes 40
Ingredients
1 1/2 cup almonds
6 dates, pitted
1 cup mint leaves, packed
1/2 cup maple syrup
1/4 cup coconut oil
1/2 cup cocoa powder
1/4 cup hemp hearts
1/4 cup unsweetened shredded coconut
3/4 teaspoons vanilla
1/2 teaspoon sea salt
Using a food processor, add all ingredients in order listed.
Blend, pausing as needed using a spatula to scrape down sides of bowl. Blend until nuts are very finely chopped and mixture can hold shape when pressed together.
Using a mini cookie scoop, form into 1 inch balls. Refrigerate for 15 minutes before serving. Store in fridge.
