To replace carob for cocoa, simply use the same amount of carob. To replace chocolate with carob, use approximately 3 tbs of carob powder for each square of chocolate.

Carob powder originates from carob pods, which are a member of the legume family. Carob was first used thousands of years ago and referenced in the bible. It was once believed that John the Baptist sustained himself using the carob bean, so carob is also referred to as St. John’s bread. Carob is an excellent source of calcium, is low in fat, and is said to contain more than three times as much calcium as milk. It contains protein as well as vitamins A, B, B2, B3 and D. It is also high in calcium, phosphorus, potassium and magnesium and contains iron, manganese, barium, copper and nickel. Additionally, Carob is free of the stimulants caffeine and theobromine, as well as oxalic acid, which prevents the body from using calcium and zinc. Carob is naturally sweet and is a great cocoa/cacao/chocolate alternative.
