Very easy and yummy recipe for some no cook nachos! It doesn’t require cooking and only takes around 5 minutes to make, yet it’s packed with so much flavour and is really fresh!
I think it’s a great alternative to a traditional nachos recipe.
It’s filling enough to have as a quick lunch and is also great as a snack.
I love to serve these nachos with a smokey vegan cheese sauce, which is also included in my recipe! I’m using corn chips but you can use another kind if you prefer and if you have a dehydrator, then you can even make your own chips!
Serves 2
Prep Time 5 min
Total Time 5 min
Vegan Cheese Sauce
- 1/2 cup raw cashews
- 1/2 cup soy cream (or water but soy cream will taste better)
- 2 tbsp nutritional yeast
- Smoke salt
- 1 tbsp melted margarine (you can leave this out but it tastes better with it in)
Nachos Dip
- 1/2 small onion
- 2 ripe medium tomatoes
- 1 ripe avocado
- Small handful fresh parsley
- 1 tbsp toasted argan oil (or olive oil but argan adds more flavour)
- 1/2 tbsp lemon juice
- Salt
- Pepper
You’ll Also Need
- Fresh chives chopped for garnish (optional)
- Corn chips (or other chips you prefer)
Vegan Cheese Sauce
- Make the vegan cheese sauce by blending the cashews until it’s fine.
- Add in the soy cream, nutritional yeast and smoke salt and blend until it’s smooth. You may need to scrape down the sides if the cashew gets stuck.
- Add in the melted margarine and blend slowly until it’s combined.
- Transfer into a bowl and set aside. Wash the blender.
Nachos Dip
- Blend the onion until it’s finely chopped.
- Add in all of the other “nachos dip” ingredients and blend until there are small chunks of tomato and avocado.
- Garnish with the chives and serve with corn chips and enjoy!
