Great for breakfast with some vegan milk, in a parfait with some vegan yogurt or homemade vegan ice-cream, sprinkled onto a smoothie, etc! There are just so many ways to eat it and the best thing is that you make a batch, store it in the fridge and it’s always ready to go when you want a quick breakfast or snack!
It takes around 20 minutes to bake and tastes absolutely amazing! It has hints of coconut, the perfect amount of sweetness and is also crunchy! Plus it’s very healthy and nutritious as it’s loaded with all kinds of superfoods, is free of refined sugar and you can of course also use gluten-free oats! So I hope you like this recipe!

Ingredients
- 2 cups rolled or old-fashioned oats (gluten-free if you like)
- 1/4 cup almond flakes
- 1/4 chopped walnuts
- 1/4 cup buckwheat groats
- 3 tbsp chia seeds
- 3 tbsp ground flaxseed (or whole)
- 1/4 tsp cinnamon powder
- 3 tbsp melted coconut oil
- 2 tbsp agave
- 1/4 cup sweet dried fruit chopped (e.g. apricot, apple, pineapple, dates, mango, banana, figs, mulberries)
- 2 tbsp coconut flakes
Instructions
- Preheat your oven to 150 degrees celsius or 300 degrees fahrenheit fan-forced.
- Line a baking try with some non-stick baking paper.
- Mix all of the dry ingredients (except the dried fruit and coconut flakes) in a big bowl.
- Add in the melted coconut oil and agave and combine.
- Transfer the mixture to a baking tray and pat it down to form a thin layer.
- Bake in the preheated oven for around 20 minutes until the granola is golden.
- Let it cool down for a few minutes and then break it up and mix in the dried fruit and coconut flakes.
- Serve immediately or store in a jar or air-tight container in the fridge.
