These banana oatmeal cookies are probably the easiest and healthiest cookies ever!
They’re vegan, sweetened by banana and sultanas, gluten-free if you use gluten-free oats and there’s also no oil! – You can add 1 tablespoon of coconut oil though if you like which would make these cookies taste even a little bit better.
They’re so easy to make as there aren’t many ingredients you need for them and you would be able to get these ingredients from most supermarkets or you may even have them in your kitchen right now. That’s also why they’re perfect in the mornings for breakfast! You can just whip them up with ingredients you have hand! You basically just need a ripe banana and some oats. I do add some extra superfood ingredients to make these cookies even more nutritious but you can leave them out and they would work just as well.
I love to have these as breakfast cookies or as a healthy snack!
My recipe makes 6 cookies, which is perfect for one person. You can of course increase it to make more.
Yields 6
- 1 large very ripe banana
- 1/2 cup rolled oats (gluten-free if desired)
- 2 tbsp sweet dried fruit such as sultanas, raisins, currants, lingonberries
- Pinch of salt
- Pinch of cinnamon
- 1/2 tbsp chia seeds (optional)
- 1/2 tbsp flaxseed ground or whole (optional)
- 1/2 tbsp buckwheat groats (optional but recommended for crunch)
- 1 tbsp optional coconut oil
- Preheat your oven to 175 degrees celsius or 350 degrees fahrenheit using the fan-forced setting.
- Mash banana until no clumps are left.
- Mix all of the other ingredients together with the banana until well-combined. Mix in optional coconut oil if you desire.
- Bake for around 18 to 20 minutes until golden. Let the cookies cool down to harden a little.
