Herbed Sweet Potato Stew

 

 

 

 

 

Ingredients

  • 8 russet potatoes diced
  • 5 stalks of celery diced
  • 1 yellow onion diced
  • 2 cups fresh carrots diced
  • 2 cups fresh mashed sweet potatoes
  • 1 tablespoon Herbs de Provence – herb blend
  • 32 oz. water

Directions

add all ingredients to a large stock pot or a crockpot.

stovetop: bring to boil, reduce heat to simmer for 1 hour or until potatoes are tender.

crockpot: cook on high for 4 hours or until potatoes are tender.

Top with optional seasonings: black pepper, a sprinkle of salt or sriracha hot sauce.
