Mango-Mint Green Smoothie

 

 

 

 

 

This has got to be my favourite green smoothie recipe. It’s creamy, not too sweet and tastes like summer. It’s packed with pro-vitamin A (beta-carotene), vitamin C, fibre, folate, potassium and vitamin K.

Ingredients:

Makes 2 Serves

-1 cup ice cubes
-1 cup unsweetened almond milk
-2 tightly-packed cups of baby spinach (or shredded kale)
-a few drops of vanilla extract
-a small handful of fresh mint leaves
-1/2 large banana
-1 small mango, or 1 cup frozen chopped mango

Blend in a high speed blender until combined (around 30 seconds), garnish with fresh mint leaves and enjoy!
